Adam Hynam-Smith is the executive chef and proprietor of Dispatch, named one of enRoute Magazine's Top Ten Best New Restaurants in Canada.
With global cuisine and a beverage program that evoke a sense of place while focusing on low- and no-waste preparations, Australian-born Hynam-Smith and his team will show you the way to a place that feels foreign, yet familiar. Laura Cousins of Victoria BC is the chef of Nowhere * A Restaurant, En Route magazines #5 Best New Restaurant in Canada for 2019. A well travelled chef, her life has seen her pick up skills all over the world and apply them to a wonderful vision of modern pacific northwest cuisine. Incredibly talented, Laura’s flair for cooking in front of customers regularly sees her rolling out pasta to order, hammering out desserts, filleting fish and butchering animals, all with a wonderful ability to balance out extreme focus with a relaxed smile.
